I know it’s difficult to eat healthy while traveling, but if you’re a full-time traveling Nomad (like me), it’s imperative to find healthy recipes and snacks. Since I’ve been back to the States from Spain, I haven’t had any junk food or sweets (except some cottage cheese ice cream I made) and I haven’t eaten out. When you stay somewhere for a longer period of time, you have the time to cook. I’ve lost three lbs. in three weeks and saved money…yay! Some of my go-to recipes are:

Pan fried Wild Caught Salmon and Watermelon, Basil and Feta Salad


I forgot to take photos of every meal, but some of the other dishes I prepared are: Cucumber Melon Salad; One-Pot High-Protein Chicken, Cabbage & White Bean Soup; A chicken salad recipe with: celery, cucumber, apple, Fage 0% Greek Yogurt (in place of mayo), dijon mustard, and olive oil; Pesto Shrimp with Mushrooms; Roasted Vegetable Minestrone Soup, Avocado and Grilled Corn Salad with Cilantro Vinaigrette; and Lemon Orzo Salad with Asparagus and Tomatoes. I’ll have a bagged salad two-three times a week and a sweet potato at least once a week. Scrambled eggs four x a week. A frozen organic dinner i.e. Healthy Choice, etc. a couple of times a week. Amy’s organic soups with low sodium. I limit how often I’ll have something with pasta, rice, or dairy.
Some of my snacks include: low fat mozzarella cheese sticks, grass fed beef sticks, apples, grapes, Owyn plant based protein shake, and carrot & celery sticks with hummus.

I joined the fitness center here in Kanab and went to a great class called tone and sculpt. Then on Monday I was looking forward to a class called Hi-Fit Aerobics. Unfortunately, I injured my knee because I forgot I’m in my late 60’s! It was high intensity and at times the instructor (in her 20’s) would have us jump up and down quickly, making a loud stomping noise. Anyway, it didn’t start to hurt until that evening. It wasn’t extremely swollen and I could walk on it fine. I did everything they say to do…RICE…Rest.Ice.Compression.Elevate, but it seemed to get worse, so I went to the local small town emergency room on Thursday. They don’t think anything is torn, and put an ace bandage on it. It hurts if I crouch down. I ordered a compression knee brace that arrived yesterday. Luckily, I’ve already done/seen most everything I wanted to in this area.
Speaking of this area…here’s a photo from downtown. I like small towns, but this one is too small to live in and it’s 1.5 hrs. one way to St. George, Utah and Page, Arizona. The pros of staying here to explore Southern Utah are that it’s beautiful and centrally located to Zion, Bryce, Antelope Canyon, and St. George, Utah. The cons are that it you like nightlife (which I don’t care for much anymore), there really isn’t any that I know of and it is quite a drive to go to the aforementioned places. I just discovered that some legendary movies were filmed here: Butch Cassidy and the Sundance Kid, How the West was Won, Mackenna’s Gold, The Outlaw Josie Wales, and The Apple Dumpling Gang.

I leave later this week to spend a week in Panguith, Utah. It’s only a 75 minute drive, but I didn’t want to drive 3 hours round-trip from here to visit Bryce Canyon National Park a couple of times. In the meantime, I’m practicing self-care, streaming documentaries/movies, reading, researching, cooking, etc. I hope everyone has a wonderful weekend!
