Recently I hiked with a Meetup group off the Blue Ridge Parkway near Asheville, North Carolina and I think it may be my favorite hike so far! The views were outstanding and it’s so nice to be out in nature with like-minded people.

I’ve mentioned my addiction to preparing new recipes. I made three rolls using rice paper…shrimp and vegetables, Greek yogurt and fruit, and a vegetable roll briefly fried in oil. Also a butter bean, spinach and chicken recipe that James Bok has on his site. It was so good! They were all delicious!

I sent a photo of one of my brother’s grandchildren to a company that specializes in paint by number kits. It was quite intricate and took a couple of months working on it almost daily to finish. I had to freehand the face because it looked weird if I didn’t. Here is the photo, the pliable canvas that was sent to me, and the finished result.

I’m giving it to him as a birthday present. Have a great Labor Day weekend!
